Vegetarian Tofu with Nori Sausage

Tofu with Nori is made with tofu, Nori seaweed, bread crumbs, soy sauce and spices.

Tofu400 g0.88 lb
Soaked Nori250 g0.55 lb
Bread crumbs200 g7 oz
Potato flour50 g1.76 lb
Starch25 g0.88 oz
Guar gum10 g0.35 oz
Carrageenan10 g0.35 oz
Salt10 g0.35 oz
Pepper5 g0.17 oz
Onion powder5 g0.17 oz
Ginger0.5 g0.01 oz
Soy sauce15 ml0.5 oz fl
Instructions
  1. Soak about 100 g (3.5 oz) of crushed Nori seaweed (see page 42) in 500 ml (2 cups) of water for 60 minutes.
  2. Drain.
  3. Measure 250 g.
  4. Grind or mash tofu and mix seaweeds, bread crumbs, soy sauce and spices.
  5. Add starch, guar and carrageenan and mix.
  6. Add potato flour and mix all together.
  7. Stuff hard into 38 mm casings.
  8. Cook in 176-185° F (80-85° C) water for 20 minutes.
  9. Place sausages in cold water for 5 minutes.
  10. Remove and let them cool.
