Rice Sausage with Apple Sauce

apple sauce200 g0.44 lb.
vital wheat gluten80 g3 oz
soy protein isolate20 g3 Tbsp
water as needed50 g3 Tbsp
Ingredients per 1000g (1 kg) of materials
cinnamon2 g1 tsp
ground cloves0.25 g1/8 tsp
sugar10 g2 tsp
carrageenan10 g2 tsp
  1. Combine rice, apple sauce, soy protein isolate, carrageenan and spices.
  2. Add wheat gluten and remix. Add as much water as needed and remix.
  3. Stuff into 32 mm casings.
  4. Cook sausages in water at 176 F (80 C), about 15-20 minutes.
  5. Cool in cold water. Store in refrigerator.
