Gloucester Sausage

Traditional English Gloucester sausage was made from Gloucester Old Spot pig (a rare breed) and flavored with sage.

Pork450 g0.99 lb
Pork fat200 g0.44 lb
Rusk150 g0.33 lb
Water200 g0.44 lb
Ingredients per 1000g (1 kg) of materials
Salt18 g3 tsp
Pepper2.0 g1 tsp
Sage, rubbed2.0 g2 tsp
Thyme1.0 g1 tsp
Mace0.5 g1/4 tsp
  1. Soak rusk in water.
  2. Grind meat and fat with 3/16” (5 mm) plate.
  3. Add all ingredients and re-mix.
  4. Re-grind meat with 3/16” (5 mm) plate.
  5. Stuff into hog casings.
  6. Refrigerate.
  7. Pan-fry or grill before serving.
