Ingredients per 1000g (1 kg) of materials
Salt | 15 g | 2-1/2 tsp |
White pepper | 8.0 g | 4 tsp |
Nutmeg | 1.0 g | 1/2 tsp |
Mace | 1.0 g | 1/2 tsp |
Sage, rubbed | 1.0 g | 1 tsp |
Cloves, ground | 0.25 g | 1/5 tsp |
Ginger | 0.5 g | 1/4 tsp |
Cayenne | 0.25 g | 1/5 tsp |
Instructions
- Grind meat and fat through 1/4” (6 mm) plate.
- Mix meat and fat with boiled rice, cracker meal and all ingredients.
- Fill into small diameter hog casings forming links. Refrigerate.
- Cook before serving.
