Longaniza Fresca

Longaniza Fresca is a fresh sausage popular in Castellón de la Plana province of País Valenciano region of Spain. Castellón, is the capital city of the province of Castellón. The sausage is made with quality lean pork, lean cuts from shoulder are suitable, and pork belly. Ingredients per 1000g (1 kg) of meat
Salt18 g3 tsp
White pepper2.0 g1 tsp
Cinnamon0.5 g1/4 tsp
Nutmeg0.3 g1/8 tsp
Instructions
  1. Grind meats through 10 mm (3/8”) plate.
  2. Mix with salt and spice.
  3. Stuff into 22-24 mm sheep casings forming 10 cm (4”) long links.
  4. Refrigerate.

Cook fully before serving by frying or grilling.
