Schlesische Bratwurst (Silesian Bratwurst)
Schlesische Bratwurst is a small diameter fine grind sausage having its origin in the former German province of Silesia (German: Schlesien).

Ingredients per 1000g (1 kg) of meat
| Salt | 18 g | 3 tsp |
| Pepper | 2.0 g | 1 tsp |
| Paprika | 2.0 g | 1 tsp |
| Caraway | 0.5 g | 1/4 tsp |
| Onion powder | 2.0 g | 1 tsp |
Instructions
- Grind meat and belly through 3 mm (1/8") plate.
- Mix with all ingredients.
- Stuff into 22-24 mm sheep casings forming 25 cm (10") links.
- Refrigerate.
Notes
Cook fully by boiling before serving.
