Värmland is a Swedish sausage made with ground pork and beef that is mixed with potatoes, onions, salt and pepper. Värmland is a region in Sweden. Potato sausage is also known as Potatiskorv.

Ingredients per 1000g (1 kg) of meat
Salt15 g2-1/2 tsp
White pepper4.0 g2 tsp
Allspice, ground1.0 g1/2 tsp
Nutmeg0.5 g1/4 tsp
Ginger0.3 g1/8 tsp
Onion, chopped30 g1 oz.
Cold water60 ml2 oz fl
Instructions
  1. Grind meats, boiled potatoes and onion through 3/8” (10 mm) plate.
  2. Mix ground meat, potatoes, water and spices well together.
  3. Stuff into 36 mm hog casings.
  4. Place in hot water and cook at 80° C (176° F) for 35 minutes.
  5. Store in refrigerator.
Notes
Most Swedish potato sausage recipes include allspice and the proportion of beef and pork vary from 75/50 - 50/50 - 50/75 pork to beef.
Brown sausages by frying or drilling for serving.
