Butifarra de Huevos is a simple to make white sausage with eggs.

Back fat or hard fat trimmings200 g0.44 lb
Ingredients per 1000g (1 kg) of meat
Salt18 g3 tsp
White pepper2.0 g1 tsp
Eggs, whole22
Nutmeg0.5 g1/4 tsp
Instructions
  1. Grind meats through 1/4” (6 mm) plate.
  2. Mix ground meat with all ingredients.
  3. Stuff into into 36 mm hog casings.
  4. Cook in water at 80° C (176° F) for 35 minutes.
  5. Cool the sausages in cold water.
  6. Drain, briefly dry and refrigerate.
