Ingredients per 1000g (1 kg) of meat
Salt | 18 g | 3 tsp |
Pepper | 2.0 g | 1 tsp |
Nutmeg | 1.0 g | 1/2 tsp |
Ginger | 0.5 g | 1/4 tsp |
Cardamom | 0.5 g | 1/4 tsp |
Cayenne pepper | 0.3 g | 1/8 tsp |
Lemon zest | 1.0 g | 1/2 tsp |
Instructions
- Grind meat through 5 mm (1/4") plate.
- Mix with all ingredients.
- Stuff into 28 mm pork casings forming 30 cm (12") links.
- Cook in water at 80º C (176º F) for 30 minutes.

Serve by grilling.
