Rostbratwurst

Rostbratwurst is a simple to make yet high quality German grill sausage.

Pork belly, no more than 30% visible fat1000 g2.2 lb
Ingredients per 1000g (1 kg) of meat
Salt18 g3 tsp
Pepper2.0 g1 tsp
Nutmeg1.0 g1/2 tsp
Ginger0.5 g1/4 tsp
Cardamom0.5 g1/4 tsp
Cayenne pepper0.3 g1/8 tsp
Lemon zest1.0 g1/2 tsp
Instructions
  1. Grind meat through 5 mm (1/4") plate.
  2. Mix with all ingredients.
  3. Stuff into 28 mm pork casings forming 30 cm (12") links.
  4. Cook in water at 80º C (176º F) for 20 minutes.

Serve by grilling.
