Sea Scallop Souffle Snacks

Sea scallop soufflé snacks.
  • 1 pound cooked sea scallops
  • 1/4 cup mayonnaise or salad dressing
  • 2 tablespoons drained sweet pickle relish
  • 1 tablespoon chopped parsley
  • 1-1/2 teaspoons lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon Worcestershire sauce
  • Dash pepper
  • 1 egg white, beaten
  1. Combine all ingredients except scallops and egg white.
  2. Mix well.
  3. Fold into egg white.
  4. Place scallops on a well greased cooky sheet, 15 x 12 inches.
  5. Top each scallop with mayonnaise mixture.
  6. Broil about 3 inches from source of heat for 3 to 4 minutes or until brown.
Makes about 36 hors d'oeuvres.
