Scallop Canapes With Bacon

Scallop canapés with bacon.
  • 1/2 pound cooked scallops
  • 16 slices bacon
  • 8 slices white bread
  • 1 package (8 ounces) sliced cheese
  • Paprika
  1. Cut large scallops in half.
  2. Fry bacon until crisp; drain on absorbent paper.
  3. Save bacon drippings.
  4. Trim crusts from bread.
  5. Place a slice of cheese and two slices of bacon on each piece of bread.
  6. Cut into quarters.
  7. Place scallops on top of bacon.
  8. Brush with bacon drippings.
  9. Sprinkle with paprika.
  10. Place on a greased boiler pan about 3-inches from source of heat.
  11. Broil for 3 to 4 minutes or until brown.
