Scallop Amandine

Scallop Amandine.
  • 2 pounds scallops, fresh or frozen
  • 1 teaspoon salt
  • Dash pepper
  • 1/2 cup flour
  • 1/2 cup blanched, slivered almonds
  • 1/2 cup butter or margarine, melted
  • 2 tablespoons chopped parsley
  • Toast points
  1. Thaw frozen scallops.
  2. Remove any shell particles and wash.
  3. Cut large scallops in half.
  4. Sprinkle scallops with salt and pepper.
  5. Roll in flour.
  6. Fry almonds in butter until lightly browned.
  7. Remove almonds.
  8. Add scallops and continue frying.
  9. When scallops are brown on one side, turn carefully and brown the other side.
  10. Cooking time approximately 4 to 6 minutes.
  11. Add parsley and almonds.
  12. Serve on toast points.
