Oyster Fritters

Oyster fritters.
  • 1 pint oysters
  • 2 cups sifted flour
  • 1 tablespoon baking powder
  • 1-1/2 teaspoon salt
  • 2 eggs, beaten
  • 1 cup milk
  • 1 tablespoon fat, melted
  1. Drain oysters and chop.
  2. Sift dry ingredients together.
  3. Combine beaten eggs, milk and fat.
  4. Pour into dry ingredients and stir until smooth.
  5. Add oysters.
  6. Drop batter by teaspoonful into hot fat, heated to 350° F, and fry about 3 minutes or until golden brown.
  7. Drain on absorbent paper.
Serves 6.
