Deep Fat Fried Oysters

Deep fat fried oysters.
  • 1 quart select oysters
  • 2 eggs, beaten
  • 2 tablespoons milk
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 cup bread crumbs, cracker crumbs, or cornmeal
  • Tartar sauce:
  • 1/2 cup mayonnaise
  • 1 Tablespoon chopped onion
  • 1 Tablespoon chopped pickles
  • 1 Tablespoon chopped parsley
  • 1 Tablespoon chopped olives
  • Mix thoroughly and chill.
  1. Drain oysters.
  2. Mix eggs, milk and seasonings.
  3. Dip oysters in egg mixture and roll in crumbs.
  4. Fry in hot fat heated to 375° F about 2 minutes or until brown.
  5. Drain on absorbent paper and serve immediately with slices of lemon or Tartar sauce.
