Molded Salmon Salad

Molded salmon salad.
  • 1-pound can salmon
  • 2 hard boiled eggs, chopped
  • 1/2 cup ripe olives, chopped
  • 1/2 cup toasted almonds, sliced
  • 1 tablespoon gelatin
  • 1/4 cup cold water
  • 1 cup mayonnaise or salad dressing
  • 1 cup thick sour cream
  • 1 tablespoon onion, grated
  • 3/4 teaspoon salt
  • 2 tablespoons lemon juice
  • 1/2 cup parsley, chopped
  • Lettuce
  • 3 fresh tomatoes, quartered
  • 1/3 cup green pepper, chopped
  • 2 tablespoons onion, chopped
  1. Drain and flake salmon.
  2. Combine the first four ingredients.
  3. Soak gelatin in cold water for 5 minutes and dissolve over hot water.
  4. Stir into mayonnaise.
  5. Add sour cream, onion, salt, lemon juice and parsley.
  6. Combine with fish mixture.
  7. Place in a ring mold and chill until firm.
  8. Unmold on a bed of lettuce and fill center with the tomatoes, green pepper and onion.
  9. Serve with mayonnaise.
