Salmon Rice Loaf

Salmon rice loaf.
  • 1-1/2 pounds salmon steaks or fillets, cut into small pieces
  • 1/2 cup uncooked white rice
  • 1-1/2 teaspoons salt
  • Dash pepper
  • 1/4 cup onion, chopped
  • 1/4 cup green pepper, chopped
  • 3/4 cup water
  1. Combine all of the ingredients except water.
  2. Place in a well greased casserole and pour water over top.
  3. Cover tightly and bake in a moderate oven, 350° F, for 1-1/2 hours.
  4. Turn out on a hot platter and serve plain or with a sauce.
