Ocean Perch Tomato Aspic

Ocean perch tomato aspic
  • 2 cups flaked ocean perch
  • 1 tablespoon gelatin
  • 1/4 cup cold water
  • 2 cups tomato juice
  • 1/2 cup chopped celery
  • 3/4 cup chopped onion
  • 3 sprigs parsley
  • 2 tablespoons vinegar
  • 4 whole cloves
  • 2 teaspoons sugar
  • 1-1/2 teaspoons salt
  • 1/3 cup pickle relish
  • 3 hard boiled eggs, chopped
  • Salad greens
  • Mayonnaise or salad dressing
  1. Soften gelatin in cold water for 5 minutes.
  2. To the tomato juice, add 1/2 cup of celery and the onion, parsley, vinegar, cloves, sugar, salt and pepper; simmer for 15 minutes.
  3. Strain.
  4. Add gelatin and stir until dissolved.
  5. Cool.
  6. Add the remaining celery, relish, egg and fish.
  7. Pour into mold and chill until firm.
  8. Unmold on salad greens.
  9. Garnish and serve with mayonnaise.
