Ocean Perch Club Sandwiches

Ocean perch club sandwiches
  • 2 cups flaked ocean perch
  • 1 cup sandwich spread
  • Dash salt
  • Dash pepper
  • 18 slices buttered toast
  • 4 hard boiled eggs, sliced
  • 6 lettuce leaves
  1. Combine fish, half of sandwich spread, salt and pepper.
  2. Spread 6 slices of toast with fish mixture; arrange egg, lettuce and remaining sandwich spread between other slices.
  3. Fasten layers together with toothpicks.
  4. Cut into quarters.
  5. Garnish and serve.
