Ocean Perch Pie

Ocean perch pie
  • 2 cups flaked ocean perch
  • 1 large onion, sliced
  • 2 tablespoons butter or other fat, melted
  • 2 tablespoons flour
  • 3/4 teaspoon salt
  • Dash pepper
  • 1-1/2 cups milk
  • 2 cups diced cooked potatoes
  • 3/4 cup grated cheese
  • 1 cup pastry mix
  1. Cook onion in butter until tender.
  2. Blend in flour and seasonings.
  3. Add milk gradually and cook until thick, stirring constantly.
  4. Add potatoes, cheese and fish.
  5. Pour into a well greased casserole.
  6. Prepare pastry as directed.
  7. Cover casserole with pastry.
  8. Bake in a hot oven, 450° F, for 20 to 25 minutes or until brown.
