Ocean perch and eggs
  • 1 pound ocean perch fillets
  • 1/2 teaspoon salt
  • 1/2 cup chili sauce
  • 6 eggs, separated
  • 1/2 teaspoon salt
  • Dash pepper
  • 1/4 teaspoon paprika
  1. Skin fillets and place in a well greased, shallow baking dish.
  2. Sprinkle with salt and cover with chili sauce.
  3. Bake in a moderate oven, 350° F, for 20 to 25 minutes or until fish flakes easily when tested with a fork.
  4. Beat egg whites until stiff but not dry; add seasonings.
  5. Spread on fish and top with slightly beaten egg yolks.
  6. Continue baking for 8 to 10 minutes or until egg mixture is set.
  7. Garnish and serve immediately.
