Halibut in Sour Cream Sauce

Halibut in sour cream sauce
  • 2 pounds halibut steaks or fillets
  • 1/2 cup flour
  • 1-1/4 teaspoons salt
  • 1 teaspoon paprika
  • Dash pepper
  • 1/2 cup onion rings
  • 1/3 cup butter or other fat, melted
  • 1/2 teaspoon crushed sweet basil
  • 1 cup sour cream
  • 1 tablespoon chopped parsley
  1. Cut steaks into serving size portions and roll in flour seasoned with salt, paprika and pepper.
  2. Cook onion in butter until tender.
  3. Remove onion from pan and save.
  4. Place fish in pan.
  5. Fry at moderate heat.
  6. When fish is brown on one side, turn carefully and brown the other side.
  7. Cooking time approximately 10 minutes, depending on thickness of fish.
  8. Cover top with onions, sweet basil and sour cream.
  9. Cover and simmer for 5 minutes or until fish flakes easily when tested with a fork.
  10. Garnish with parsley.
