Baked Halibut Loaf

Baked halibut loaf
  • 2 cups flaked halibut
  • 1 chicken bouillon cube
  • 3/4 cup boiling water
  • 1-1/2 cups soft bread cubes
  • 1/2 cup chopped celery
  • 1 tablespoon chopped parsley
  • 1/2 cup coffee cream
  • 1 teaspoon grated onion
  • 1 teaspoon salt
  • Dash pepper
  • 2 teaspoons lemon juice
  • 2 eggs, beaten
  1. Dissolve bouillon cube in boiling water.
  2. Combine all ingredients.
  3. Place in a well greased loaf pan, 9-1/2 x 5-1/4 x 2-3/4 inches.
  4. Bake in a moderate oven, 350° F, for 1 hour or until loaf is firm in the center.
Serves 6.
