Vegetarian Tomato Sausage

textured vegetable protein100 g0.22 lb.
water for TVP300 g0.66 lb.
oil emulsion200 g0.44 lb.
cracker meal100 g3-1/2 oz
finely diced tomatoes300 g0.66 lb.
Ingredients per 1000g (1 kg) of meat
salt10 g1-1/2 tsp
pepper2 g1 tsp
garlic3.5 g1 clove
small chopped onion50 g1 onion
carrageenan5 g1 tsp
Instructions
  1. Soak TVP in water for at least 30 minutes.
  2. Mix cracker meal, TVP, starch, salt, carrageenan, salt, spices and tomatoes.
  3. Add oil emulsion and remix everything together.
  4. Stuff into 32 mm casings.
  5. Cook in water at 176 F (80 C) for 20 minutes.
  6. Cool in cold water.
  7. Keep refrigerated.
Notes

* oil emulsion: soy protein isolate/oil/water at 1:4:5.

Cracker meal is a type of course flour which is made from finely milled crackers. It is often used as a seafood fry mix. It can be replaced with bread crumbs.
