Cambridge Sausage with Rice and Cracker Meal
Cambridge sausage is an English pork sausage made with rice and cracker meal.
|Lean pork||500 g||1.10 lb|
|Back fat or far pork trimmings||250 g||0.55 lb|
|Boiled rice||150 g||0.33 lb|
|Cracker meal||100 g||0.22 lb|
Ingredients per 1000g (1 kg) of meat
|Salt||15 g||2-1/2 tsp|
|White pepper||8.0 g||4 tsp|
|Nutmeg||1.0 g||1/2 tsp|
|Mace||1.0 g||1/2 tsp|
|Sage, rubbed||1.0 g||1 tsp|
|Cloves, ground||0.25 g||1/5 tsp|
|Ginger||0.5 g||1/4 tsp|
|Cayenne||0.25 g||1/5 tsp|
- Grind meat and fat through 1/4” (6 mm) plate.
- Mix meat and fat with boiled rice, cracker meal and all ingredients.
- Fill into small diameter hog casings forming links. Refrigerate.
- Cook before serving.
