Chakalaka Boerewors

Chakalaka Boerewors is a South African mildly hot and spicy fresh pork sausage that is made with pork, beef or other meats. The sausage derives its name from the Chakalaka sauce which is in its most simple form a combination of onions, curry powder and tomatoes.

Ingredients per 1000g (1 kg) of meat
Salt18 g3 tsp
Pepper2.0 g1 tsp
Onions, chopped40 g1/2 onion
Nutmeg0.5 g1/4 tsp
Cloves, ground0.3 g1/8 tsp
Curry powder15 g1 Tbsp
Tomato ketchup15 g1 Tbsp
Ginger0.5 g1/4 tsp
Cayenne0.5 g1/4 tsp
Garlic, minced8.0 g2 cloves
Worcester sauce5 ml1 tsp
Cider vinegar30 ml1 oz fl
Instructions
  1. Grind meats through 3/8” (8 mm) plate.
  2. Mix with all ingredients.
  3. Grind again through 1/4” (6 mm) plate.
  4. Stuff into 32 mm hog casings forming one continuous coil.
  5. Refrigerate.
  6. Cook before serving.
