Chakalaka Boerewors is a South African mildly hot and spicy fresh pork sausage that is made with pork, beef or other meats. The sausage derives its name from the Chakalaka sauce which is in its most simple form a combination of onions, curry powder and tomatoes.

Ingredients per 1000g (1 kg) of meat
|Salt||18 g||3 tsp|
|Pepper||2.0 g||1 tsp|
|Onions, chopped||40 g||1/2 onion|
|Nutmeg||0.5 g||1/4 tsp|
|Cloves, ground||0.3 g||1/8 tsp|
|Curry powder||15 g||1 Tbsp|
|Tomato ketchup||15 g||1 Tbsp|
|Ginger||0.5 g||1/4 tsp|
|Cayenne||0.5 g||1/4 tsp|
|Garlic, minced||8.0 g||2 cloves|
|Worcester sauce||5 ml||1 tsp|
|Cider vinegar||30 ml||1 oz fl|
- Grind meats through 3/8” (8 mm) plate.
- Mix with all ingredients.
- Grind again through 1/4” (6 mm) plate.
- Stuff into 32 mm hog casings forming one continuous coil.
- Cook before serving.
