Devon is a large diameter medium quality emulsified sausage sold in Australia and New Zealand. Often served in a sandwich with tomato sauce but can also be sliced and fried.

Ingredients per 1000g (1 kg) of meat
Salt18 g3 tsp
Cure #12.5 g1/2 tsp
Soy protein concentrate10 g2 tsp
White pepper2.0 g1 tsp
Coriander1.0 g1 tsp
Paprika, sweet1.0 g1 tsp
Cayenne pepper0.5 g¼ tsp
Nutmeg0.5 g1/4 tsp
Onion powder2.0 g1 tsp
Potato flour50 g1.7 oz
Tomato juice50 ml1.66 oz
Water60 ml2 oz fl
Instructions
  1. Grind all meats through 3/8” (10 mm) plate.
  2. Using food processor emulsify ground meats with water and tomato juice. Add all remaining ingredients and emulsify again.
  3. Stuff into large diameter cellulose or fibrous casings.
  4. Hang for 2 hours at room temperature.
  5. Cook in water at 80° C (176° F) for 60-90 min according to thickness until sausages reach 72° C (160° F) internal temperature.
  6. Place sausages for 10 min in cold water, cool in air and refrigerate.
