Oyster Salad

Oyster salad.
  • 1 pint oysters
  • 1/4 teaspoon celery salt
  • 1 tablespoon butter
  • 1/2 cup lettuce, chopped
  • 2 hard boiled eggs, diced
  • 1/2 cup celery, diced
  • 1 pimento, chopped
  • 1 teaspoon onion, grated
  • 1 teaspoon lemon juice
  • 1/2 cup mayonnaise or salad dressing
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • Lettuce
  1. Drain oysters.
  2. Add celery salt and cook in butter until edges begin to curl.
  3. Chill and dice oysters.
  4. Combine all ingredients and serve on lettuce cups.
  5. Garnish with paprika.
