Oysters Rockefeller

Oysters Rockefeller.
  • 36 shell oysters
  • 2 cups spinach, cooked
  • 4 tablespoons onion
  • 2 bay leaves
  • 1 tablespoon parsley
  • 1/2 teaspoon celery salt
  • 1/2 teaspoon salt
  • 6 drops Tabasco sauce
  • 1/2 cup bread crumbs
  • 6 tablespoons butter
  1. Shuck and drain oysters; place on deep half of shells.
  2. Put spinach, onion, bay leaves and parsley through food grinder.
  3. Add seasonings to spinach and cook in butter for 5 minutes.
  4. Add bread crumbs and mix well.
  5. Spread mixture over oysters and bake in hot over 400° F for about 10 minutes.
  6. Garnish with lemon slices.
