Creamed Oysters

Creamed oysters.
  • 1 pint oysters
  • 1/2 cup butter
  • 1/2 cup flour
  • 3 cups milk
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  1. Simmer oysters in their liquor about 5 minutes or until edges begin to curl. Drain.
  2. Melt butter in top of double boiler, blend in flour, add milk and cook until thick, stirring constantly.
  3. Add oysters, seasonings and heat.
  4. Serve in patty shells or on toast.
Serves 6.
