Boerewors Sausage

Boerewors is a South African specialty. The name comes from Afrikaans, the word ‘boer’ translates to ‘farmer’ and ‘wors’ translates to ‘sausage’.

Pork (80/20 lean/fat)350 g0.77 lb
Water30 g1.0 oz fl
Cider vinegar30 g1.0 oz fl
Ingredients per 1000g (1 kg) of meat
Salt15 g2-1/2 tsp
Pepper2.0 g1 tsp
Coriander1.0 g1/2 tsp
Nutmeg0.5 g1/4 tsp
Cloves, ground0.3 g1/8 tsp
Allspice, ground0.5 g1/4 tsp
Instructions
  1. Grind meats through 3/8” (8 mm) plate.
  2. Mix with all ingredients.
  3. Stuff into 32 mm hog casings forming one continuous coil.
  4. Refrigerate.
  5. Barbecue/grill before serving.
