Timoleague Brown Pudding

Pork blood300 g10 oz fl
Oatmeal200 g0.44 lb
Onions, chopped50 g0.11 lb
Ingredients per 1000g (1 kg) of meat
Salt15 g2-1/2 tsp
Pepper4.0 g2 tsp
Allspice1.0 g1/2 tsp
Coriander1.0 g1/2 tsp
Nutmeg0.5 g1/4 tsp
  1. Soak cereal in the fresh pork blood the night befor preparation and keep in a cooler.
  2. Grind meat with onions through 1/4” (6 mm) plate.
  3. Mix meat with blood and spices.
  4. Stuff into 40 mm hog casings.
  5. Cook in water at 80° C (176° F) for 35 minutes.
  6. Cool and refrigerate.
