French-Fried Shrimp

French-fried shrimp.
  • 1-1/2 pounds shrimp, fresh or frozen
  • 2 eggs, beaten
  • 1 teaspoon salt
  • 1/2 cup flour
  • 1/2 cup dry bread crumbs
  1. Peel shrimp, leaving the last section of the shell on if desired.
  2. Cut almost through lengthwise and remove sand veins. Wash.
  3. Combine egg and salt.
  4. Dip each shrimp in egg and roll in flour and crumb mixture.
  5. Fry in a basket in deep fat, 350° F, for 2 to 3 minutes or until golden brown.
  6. Drain on absorbent paper.
  7. Serve plain or with a sauce.
