Oysters Creole

Oysters creole.
Ingredients
  • 1 pint oysters
  • 3 tablespoons onion, chopped
  • 2 tablespoons butter
  • 3 tablespoons flour
  • 1 cup tomato juice
  • 2 tablespoons parsley, chopped
  • 1/4 teaspoon Tabasco sauce
  • 3/4 teaspoon salt
  • Buttered toast
Instructions
  1. Drain oysters.
  2. Cook onion in butter until tender.
  3. Blend in flour, add tomato juice and cook until thick, stirring constantly.
  4. Add oysters, seasonings and simmer about 5 minutes, or until edges begin to curl.
  5. Serve on toast.
