Crab Potato Cakes

An easy but rewarding recipe for making crab cakes. The recipe is simple and quick to make, it requires only crab meat, potatoes and an egg to bind the ingredients together.
  • 1 pound crab meat
  • 1 cup mashed potatoes
  • 1 egg, beaten
  • 1/2 teaspoon salt
  • Dash pepper
  • Dash onion salt
  1. Remove any shell or cartilage from crab meat.
  2. Combine all ingredients.
  3. Shape into 12 cakes.
  4. Place cakes in a heavy frying pan which contains about 1/8-inch of fat, hot but not smoking.
  5. Fry at moderate heat.
  6. When cakes are brown on one side, turn carefully and brown the other side.
  7. Cooking time approximately 5 to 8 minutes.
  8. Drain on absorbent paper.
