Broiled Kippered Salmon with Egg Sauce

Broiled kippered salmon with egg sauce
  • 1-1/2 pounds kippered salmon
  • 2 tablespoons butter or other fat, melted
  • Dash pepper
  1. Arrange fish, skin side up, on preheated, well greased broiler pan about 4 inches from source of heat.
  2. Broil for 7 minutes.
  3. Turn, baste with butter and sprinkle with pepper.
  4. Broil 5 minutes longer or until brown.
  5. Serve with egg sauce.
