Ocean Perch Creole

Ocean perch creole
  • 2 pounds ocean perch fillets
  • 1/4 cup butter or other fat
  • 2 tablespoons flour
  • 2 cups tomato juice
  • 2 tablespoons chopped onion
  • 3 tablespoons chopped pimiento
  • 1/2 teaspoon salt
  • Dash pepper
  • Rice ring
  1. Skin fillets and cut into 1-inch pieces.
  2. Melt butter, blend in flour and add all remaining ingredients except rice.
  3. Cook, stirring occasionally, about 15 minutes or until fish flakes easily when tested with a fork.
  4. Serve hot in rice ring.
